Ingredients:

  • 12 oz high-quality dark chocolate, 60% cacao or higher, finely chopped
  • 1 tsp refined coconut oil
  • 2 cups jumbo Flame or Thompson seedless raisins
  • 1/2 cup toasted walnut pieces
  • 1/4 tsp flaky sea salt

Instructions:

  1. Chop 12 oz dark chocolate.
  2. Melt the chocolate with 1 tsp coconut oil. Heat until liquid and glossy.
  3. Whisk the mixture.
  4. Fold in 2 cups jumbo raisins. Stir until every raisin is dark and coated.
  5. Add 1/2 cup toasted walnut pieces.
  6. Prep a baking sheet with parchment paper.
  7. Scoop mounds onto the paper. Work quickly before the chocolate thickens.
  8. Sprinkle 1/4 tsp flaky sea salt over the tops.
  9. Chill for 20 minutes. Wait until the chocolate is firm to the touch.
  10. Peel from the paper. The bottoms should be flat and smooth.
