Ingredients:
- 12 oz high-quality dark chocolate, 60% cacao or higher, finely chopped
- 1 tsp refined coconut oil
- 2 cups jumbo Flame or Thompson seedless raisins
- 1/2 cup toasted walnut pieces
- 1/4 tsp flaky sea salt
Instructions:
- Chop 12 oz dark chocolate.
- Melt the chocolate with 1 tsp coconut oil. Heat until liquid and glossy.
- Whisk the mixture.
- Fold in 2 cups jumbo raisins. Stir until every raisin is dark and coated.
- Add 1/2 cup toasted walnut pieces.
- Prep a baking sheet with parchment paper.
- Scoop mounds onto the paper. Work quickly before the chocolate thickens.
- Sprinkle 1/4 tsp flaky sea salt over the tops.
- Chill for 20 minutes. Wait until the chocolate is firm to the touch.
- Peel from the paper. The bottoms should be flat and smooth.
