Ingredients:
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- ¾ cup (65g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) salt
- 1 cup (240ml) vegetable oil
- 2 large eggs
- 1 cup (240ml) buttermilk
- 2 cups (220g) shredded zucchini, squeezed slightly to remove excess water
- 1 cup (170g) semi-sweet chocolate chips
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat your oven to 350°F (175°C).
- Line a 18x13 inch rimmed baking sheet with parchment paper, leaving an overhang on the sides, and grease lightly with oil or cooking spray.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until no clumps remain.
- In a separate bowl, beat the eggs, oil, and buttermilk until the mixture is smooth and pale.
- Slowly pour the wet ingredients into the dry ingredients and stir with a rubber spatula until combined.
