Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (240ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 2 cups (220g) shredded zucchini, squeezed slightly to remove excess water
  • 1 cup (170g) semi-sweet chocolate chips
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) heavy cream

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a 18x13 inch rimmed baking sheet with parchment paper, leaving an overhang on the sides, and grease lightly with oil or cooking spray.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until no clumps remain.
  4. In a separate bowl, beat the eggs, oil, and buttermilk until the mixture is smooth and pale.
  5. Slowly pour the wet ingredients into the dry ingredients and stir with a rubber spatula until combined.
