Ingredients:

  • 3 medium bananas, peeled and cut in half crosswise
  • 6 wooden lolly sticks
  • 8 ounces (225g) dark chocolate (at least 70% cocoa solids), chopped
  • 1 tablespoon coconut oil
  • 1/4 cup (25g) chopped nuts (e.g., pecans, walnuts, almonds)
  • 1/4 cup (25g) sprinkles
  • 1/4 cup (25g) shredded coconut
  • 1/4 cup (25g) crushed biscuits (e.g., Oreos, Graham Crackers)

Instructions:

  1. Peel the bananas, cut them in half, and insert a lolly stick into the cut end of each half.
  2. Place the bananas on a prepared baking sheet and freeze for at least 2 hours, or until solid.
  3. Melt the chocolate and coconut oil in a double boiler or microwave until smooth.
  4. Place your desired toppings in separate shallow bowls.
  5. Remove the frozen bananas from the freezer. Dip each banana into the melted chocolate, allowing excess to drip off.
  6. Immediately roll the chocolate-covered banana in your chosen toppings.
  7. Place the decorated bananas back on the baking sheet and return to the freezer for 10-15 minutes to allow the chocolate to set completely.
  8. Remove from the freezer a few minutes before serving and enjoy your frozen chocolate covered bananas!
