Ingredients:
- 45 saltine crackers
- 1 cup unsalted butter
- 1 cup light brown sugar
- 2 cups semi sweet chocolate chips
- 1/2 cup crushed pecans
Instructions:
- Preheat your oven to 400°F and line a large rimmed baking sheet with aluminum foil or a silicone mat.
- Arrange 45 saltine crackers in a single layer on the pan. Note: Fit them snugly so the caramel doesn't just pool on the foil.
- Combine 1 cup unsalted butter and 1 cup light brown sugar in a medium saucepan over medium heat.
- Bring the mixture to a boil, stirring constantly until it reaches a hard roll boil.
- Boil for exactly 3 minutes until the mixture is thick, bubbly, and looks like molten gold.
- Pour the hot caramel immediately over the crackers and spread it evenly with a spatula.
- Bake in the oven for 5 minutes until the caramel is dark and vigorously bubbling.
- Remove from the oven and immediately sprinkle 2 cups semi sweet chocolate chips over the top.
- Let the chips sit for 5 minutes until they are glossy and soft to the touch.
- Spread the melted chocolate evenly, then top with 1/2 cup crushed pecans and let cool completely.
