Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground nutmeg
- ½ tsp (1g) ground cloves
- ½ tsp (1g) ground allspice
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 large eggs
- ½ cup (120ml) vegetable oil
- 1 cup (240ml) buttermilk
- 1 tsp (5ml) vanilla extract
- 1 cup (225g) unsalted butter, softened
- 3.5 cups (420g) powdered sugar
- 1 tbsp (8g) ground cinnamon
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan or two 8-inch round cake pans with butter or parchment paper.
- In a large bowl, whisk together the flour, sugar, cinnamon, nutmeg, cloves, allspice, baking soda, and salt until no clumps remain.
- Add the eggs, oil, buttermilk, and vanilla extract. Beat on medium speed for 2 minutes until the batter is smooth.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 35–40 minutes. The cake is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Allow the cake to cool completely on a wire rack before frosting.
- Beat the softened butter on high for 3 minutes until pale ivory and fluffy.
- Gradually add powdered sugar one cup at a time, beating on low then increasing to medium.
- Stir in the cinnamon, vanilla, salt, and heavy cream.
- Whip on high for one final minute to achieve a velvety, spreadable consistency.
