Ingredients:
- 2 cups (250g) all-purpose flour
- 1.5 cups (300g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground nutmeg
- 0.5 tsp (1g) ground ginger
- 0.5 tsp (1g) ground cloves
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 0.5 tsp (3g) salt
- 2 large (100g) eggs
- 1 cup (240ml) buttermilk
- 0.5 cup (120ml) vegetable oil
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese
- 0.5 cup (115g) unsalted butter
- 3 cups (360g) powdered sugar
- 1 tsp (2g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan and line with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, ginger, cloves, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for approximately 2 minutes until smooth and pale.
- Pour the batter into the prepared pan and bake for 28-32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the cake to rest in the pan for 10 minutes, then transfer to a wire rack.
- Place the cake in the refrigerator for 30 minutes to chill completely before frosting.
- Prepare the frosting by beating together softened cream cheese, softened butter, powdered sugar, cinnamon, vanilla extract, and lemon juice until smooth.
- Spread the frosting evenly over the chilled cake.
