Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1.5 cups (300g) granulated sugar
  • 1 tbsp (8g) ground cinnamon
  • 1 tsp (2g) ground nutmeg
  • 0.5 tsp (1g) ground ginger
  • 0.5 tsp (1g) ground cloves
  • 1 tsp (5g) baking powder
  • 0.5 tsp (3g) baking soda
  • 0.5 tsp (3g) salt
  • 2 large (100g) eggs
  • 1 cup (240ml) buttermilk
  • 0.5 cup (120ml) vegetable oil
  • 1 tsp (5ml) vanilla extract
  • 8 oz (225g) full-fat cream cheese
  • 0.5 cup (115g) unsalted butter
  • 3 cups (360g) powdered sugar
  • 1 tsp (2g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan and line with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, ginger, cloves, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for approximately 2 minutes until smooth and pale.
  4. Pour the batter into the prepared pan and bake for 28-32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Allow the cake to rest in the pan for 10 minutes, then transfer to a wire rack.
  6. Place the cake in the refrigerator for 30 minutes to chill completely before frosting.
  7. Prepare the frosting by beating together softened cream cheese, softened butter, powdered sugar, cinnamon, vanilla extract, and lemon juice until smooth.
  8. Spread the frosting evenly over the chilled cake.
