Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- ½ cup (100g) granulated sugar
- 1 tbsp (15g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 cup (240ml) whole milk
- ½ cup (113g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, and lemon juice until the peaches are coated in a velvety glaze.
- Pour the peach mixture into a 9x13 inch baking dish and spread evenly.
- In a mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
- Stir in the milk until the batter is smooth.
- Pour the melted butter directly into the bottom of the baking dish or mix it into the batter, then pour the batter over the peaches—do not stir; let it settle naturally.
- Sprinkle a pinch of extra cinnamon sugar over the top.
- Bake for 40–45 minutes until the fruit filling is bubbling vigorously around the edges and the crust is a deep golden mahogany.
