Ingredients:

  • 2 cups (250g) cooked chicken, shredded
  • ½ cup (75g) mayonnaise (full-fat for best flavor)
  • ¼ cup (30g) celery, finely diced
  • ¼ cup (30g) red onion, finely diced
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15ml) fresh parsley, chopped
  • ½ teaspoon (2g) salt
  • ¼ teaspoon (0.5g) black pepper

Instructions:

  1. Shred the cooked chicken using two forks.
  2. In a large mixing bowl, combine the shredded chicken, mayonnaise, celery, red onion, lemon juice, and parsley.
  3. Add salt and pepper. Mix well until all ingredients are evenly distributed and coated in mayonnaise.
  4. Taste the chicken salad and adjust seasonings as needed. Add more salt, pepper, or lemon juice to your liking.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
