Ingredients:
- 2 cups (250g) cooked chicken, shredded
- ½ cup (75g) mayonnaise (full-fat for best flavor)
- ¼ cup (30g) celery, finely diced
- ¼ cup (30g) red onion, finely diced
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15ml) fresh parsley, chopped
- ½ teaspoon (2g) salt
- ¼ teaspoon (0.5g) black pepper
Instructions:
- Shred the cooked chicken using two forks.
- In a large mixing bowl, combine the shredded chicken, mayonnaise, celery, red onion, lemon juice, and parsley.
- Add salt and pepper. Mix well until all ingredients are evenly distributed and coated in mayonnaise.
- Taste the chicken salad and adjust seasonings as needed. Add more salt, pepper, or lemon juice to your liking.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
