Ingredients:

  • 4 boneless, skinless chicken breasts (about 500g each)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper (optional for heat)
  • Oil for frying (vegetable or peanut oil)
  • 4 soft burger buns
  • 4 leaves of crisp lettuce
  • 1 large tomato, sliced
  • Mayonnaise or your preferred sauce

Instructions:

  1. In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add chicken breasts, coating well. Cover and refrigerate for at least 30 minutes.
  2. In a shallow dish, mix flour, panko breadcrumbs, oregano, cayenne pepper, salt, and pepper.
  3. Remove chicken from marinade; let excess drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
  4. Heat oil in a frying pan (or deep fryer) over medium-high heat until shimmering. Carefully add chicken; fry for 5-7 minutes per side until golden brown and cooked through.
  5. Toast buns lightly if desired. Spread mayo on the bottom bun, add lettuce, fried chicken, tomato slices, and top with the other bun.
