Ingredients:
- 4 boneless, skinless chicken breasts (about 500g each)
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper (optional for heat)
- Oil for frying (vegetable or peanut oil)
- 4 soft burger buns
- 4 leaves of crisp lettuce
- 1 large tomato, sliced
- Mayonnaise or your preferred sauce
Instructions:
- In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add chicken breasts, coating well. Cover and refrigerate for at least 30 minutes.
- In a shallow dish, mix flour, panko breadcrumbs, oregano, cayenne pepper, salt, and pepper.
- Remove chicken from marinade; let excess drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
- Heat oil in a frying pan (or deep fryer) over medium-high heat until shimmering. Carefully add chicken; fry for 5-7 minutes per side until golden brown and cooked through.
- Toast buns lightly if desired. Spread mayo on the bottom bun, add lettuce, fried chicken, tomato slices, and top with the other bun.
