Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup whole almonds, toasted
  • 1 cup dark chocolate chips
  • 2 teaspoons vegetable oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, beat the eggs. Stir in sugar, vanilla extract, and almond extract until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing until a dough forms. Fold in toasted almonds.
  6. Wrap the dough in plastic wrap and chill for 30 minutes.
  7. Divide the chilled dough into two equal pieces. On a lightly floured surface, shape each piece into a long log.
  8. Place logs on the prepared baking sheet and bake for 20 minutes or until light golden brown.
  9. Remove logs from oven and let cool for 10 minutes before slicing into 1-inch pieces.
  10. Lay the sliced biscotti cut side down on the baking sheet and bake for another 20 minutes until crisp.
  11. Remove from the oven and let cool on a wire rack.
  12. Melt chocolate and stir in vegetable oil. Dip biscotti halfway into chocolate and place back on the rack to set.
