Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup whole almonds, toasted
- 1 cup dark chocolate chips
- 2 teaspoons vegetable oil
Instructions:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the eggs. Stir in sugar, vanilla extract, and almond extract until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until a dough forms. Fold in toasted almonds.
- Wrap the dough in plastic wrap and chill for 30 minutes.
- Divide the chilled dough into two equal pieces. On a lightly floured surface, shape each piece into a long log.
- Place logs on the prepared baking sheet and bake for 20 minutes or until light golden brown.
- Remove logs from oven and let cool for 10 minutes before slicing into 1-inch pieces.
- Lay the sliced biscotti cut side down on the baking sheet and bake for another 20 minutes until crisp.
- Remove from the oven and let cool on a wire rack.
- Melt chocolate and stir in vegetable oil. Dip biscotti halfway into chocolate and place back on the rack to set.
