Ingredients:
- 200g graham cracker crumbs
- 85g unsalted butter, melted
- 300g granulated sugar, divided
- 1 pinch salt
- 900g full-fat cream cheese, room temperature
- 240g full-fat sour cream
- 1 tbsp pure vanilla extract
- 1 tsp fresh lemon juice
- 4 large eggs, room temperature
- 25g all-purpose flour
Instructions:
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, 50g sugar, and 85g melted butter until it resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes until golden. Let it cool completely.
- Wrap the outside of the cooled pan in three layers of heavy-duty aluminum foil to prevent water leakage.
- In a stand mixer on low speed, beat 900g cream cheese and 250g sugar until completely smooth and no lumps remain.
