Ingredients:

  • 200g graham cracker crumbs
  • 85g unsalted butter, melted
  • 300g granulated sugar, divided
  • 1 pinch salt
  • 900g full-fat cream cheese, room temperature
  • 240g full-fat sour cream
  • 1 tbsp pure vanilla extract
  • 1 tsp fresh lemon juice
  • 4 large eggs, room temperature
  • 25g all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs, 50g sugar, and 85g melted butter until it resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes until golden. Let it cool completely.
  5. Wrap the outside of the cooled pan in three layers of heavy-duty aluminum foil to prevent water leakage.
  6. In a stand mixer on low speed, beat 900g cream cheese and 250g sugar until completely smooth and no lumps remain.
