Ingredients:

  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Chop the onions, bell peppers, and tomatoes; mince the garlic.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add the chopped onions and sauté until translucent, about 5 minutes.
  4. Stir in the green and red bell peppers, cooking for an additional 5 minutes until softened. Add the minced garlic and cook for 1-2 minutes until fragrant.
  5. Add diced tomatoes, cilantro, cumin, and oregano; stir well.
  6. Reduce heat to low, cover, and let simmer for 10 minutes, stirring occasionally, until the mixture thickens.
  7. Season with salt and pepper to taste. Remove from heat.
