Ingredients:
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium tomato, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Chop the onions, bell peppers, and tomatoes; mince the garlic.
- In a large skillet, heat olive oil over medium heat until shimmering.
- Add the chopped onions and sauté until translucent, about 5 minutes.
- Stir in the green and red bell peppers, cooking for an additional 5 minutes until softened. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add diced tomatoes, cilantro, cumin, and oregano; stir well.
- Reduce heat to low, cover, and let simmer for 10 minutes, stirring occasionally, until the mixture thickens.
- Season with salt and pepper to taste. Remove from heat.
