Ingredients:

  • 1 cup (120g) raw almonds, finely chopped
  • 1 cup (90g) unsweetened shredded coconut
  • ½ cup (75g) Medjool dates, pitted and chopped
  • 2 tablespoons (30ml) raw honey or maple syrup
  • ½ teaspoon (2g) vanilla extract
  • Pinch of sea salt
  • ¼ cup (25g) unsweetened cacao powder or extra shredded coconut (optional)

Instructions:

  1. If using whole almonds, chop them finely or pulse briefly in a food processor.
  2. In a mixing bowl, combine chopped almonds, shredded coconut, and a pinch of sea salt.
  3. Stir in chopped Medjool dates, honey or maple syrup, and vanilla extract until well combined.
  4. Pinch off small amounts of the mixture and roll into bite-sized balls about 1 inch wide.
  5. Roll the balls in cacao powder or additional shredded coconut for an extra layer of flavor and texture.
  6. Place the bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up (optional).
  7. Enjoy immediately or store in an airtight container in the fridge.
