Ingredients:
- 1 cup (120g) raw almonds, finely chopped
- 1 cup (90g) unsweetened shredded coconut
- ½ cup (75g) Medjool dates, pitted and chopped
- 2 tablespoons (30ml) raw honey or maple syrup
- ½ teaspoon (2g) vanilla extract
- Pinch of sea salt
- ¼ cup (25g) unsweetened cacao powder or extra shredded coconut (optional)
Instructions:
- If using whole almonds, chop them finely or pulse briefly in a food processor.
- In a mixing bowl, combine chopped almonds, shredded coconut, and a pinch of sea salt.
- Stir in chopped Medjool dates, honey or maple syrup, and vanilla extract until well combined.
- Pinch off small amounts of the mixture and roll into bite-sized balls about 1 inch wide.
- Roll the balls in cacao powder or additional shredded coconut for an extra layer of flavor and texture.
- Place the bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up (optional).
- Enjoy immediately or store in an airtight container in the fridge.
