Ingredients:

  • 1 pound (450g) ground beef (80% lean for best flavor)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup (120g) mayonnaise
  • 2 tablespoons (30ml) sweet pickle relish
  • 1 tablespoon (15ml) ketchup
  • 1 teaspoon (5ml) yellow mustard
  • 1 teaspoon (5ml) apple cider vinegar
  • Salt to taste
  • 4 large flour tortillas (10-inch / 25cm)
  • 4 slices American cheese (or cheddar, if preferred)
  • 1 cup (100g) shredded lettuce
  • ½ cup (75g) diced tomatoes
  • 1/4 cup (15g) diced pickles (optional)

Instructions:

  1. In a mixing bowl, combine mayonnaise, pickle relish, ketchup, mustard, and apple cider vinegar. Stir until well mixed; add salt to taste. Set aside.
  2. Heat a skillet over medium-high heat. Add ground beef, breaking it up with a spatula. Season with onion powder, garlic powder, smoked paprika, salt, and pepper. Cook until browned and cooked through, about 8-10 minutes. Drain excess grease.
  3. Lay out a flour tortilla on a clean surface. Spread 2 tablespoons of the special sauce on the tortilla. Evenly distribute cooked beef over the tortilla. Top with a slice of cheese, lettuce, diced tomatoes, and pickles (if using).
  4. Fold in the sides of the tortilla, then roll tightly from the bottom up to secure the filling. Repeat with remaining tortillas.
  5. Optional: Heat a clean skillet over medium heat and toast wraps for 1-2 minutes on each side for added crispness. Slice in half and serve immediately.
