Ingredients:

  • 2 large English cucumbers (about 700g / 1.5 lbs), thinly sliced
  • 1 teaspoon kosher salt (6g)
  • 1 cup (240ml) full-fat Greek yogurt
  • 1/4 cup (60ml) mayonnaise
  • 2 tablespoons (30ml) white wine vinegar
  • 1 tablespoon (15ml) Dijon mustard
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 clove garlic, minced (optional)
  • 1/4 teaspoon freshly ground black pepper (1g)
  • Pinch of sugar (optional)
  • Salt to taste

Instructions:

  1. Thinly slice cucumbers. Toss with salt in a colander and let stand for 30 minutes to drain excess moisture. Pat dry with paper towels.
  2. In a small bowl, whisk together Greek yogurt, mayonnaise, white wine vinegar, Dijon mustard, dill, chives, garlic (if using), pepper, and a pinch of sugar (if using). Taste and adjust seasoning with salt.
  3. Gently fold the drained and dried cucumber slices into the dressing.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled.
