Ingredients:
- 2 large English cucumbers (about 700g / 1.5 lbs), thinly sliced
- 1 teaspoon kosher salt (6g)
- 1 cup (240ml) full-fat Greek yogurt
- 1/4 cup (60ml) mayonnaise
- 2 tablespoons (30ml) white wine vinegar
- 1 tablespoon (15ml) Dijon mustard
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 clove garlic, minced (optional)
- 1/4 teaspoon freshly ground black pepper (1g)
- Pinch of sugar (optional)
- Salt to taste
Instructions:
- Thinly slice cucumbers. Toss with salt in a colander and let stand for 30 minutes to drain excess moisture. Pat dry with paper towels.
- In a small bowl, whisk together Greek yogurt, mayonnaise, white wine vinegar, Dijon mustard, dill, chives, garlic (if using), pepper, and a pinch of sugar (if using). Taste and adjust seasoning with salt.
- Gently fold the drained and dried cucumber slices into the dressing.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled.
