Ingredients:

  • 1 medium cucumber, peeled, seeded, and roughly chopped (approximately 1 cup)
  • ¼ cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey or maple syrup (optional)
  • ¼ teaspoon sea salt
  • ⅛ teaspoon freshly ground black pepper

Instructions:

  1. Peel, seed, and roughly chop the cucumber.
  2. Add the chopped cucumber, Greek yogurt, dill, olive oil, lemon juice, Dijon mustard, honey (if using), salt, and pepper to the food processor or blender.
  3. Process until the mixture is completely smooth and creamy. Check consistency and add a tablespoon of water for a thinner dressing if needed.
  4. Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or honey to your liking.
  5. For the best flavour, refrigerate the dressing for at least 30 minutes to allow the flavours to meld.
  6. Toss with your favourite salad greens or use as a dipping sauce for crudités.
