Ingredients:
- 1 medium cucumber, peeled, seeded, and roughly chopped (approximately 1 cup)
- ¼ cup plain Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon Dijon mustard
- ½ teaspoon honey or maple syrup (optional)
- ¼ teaspoon sea salt
- ⅛ teaspoon freshly ground black pepper
Instructions:
- Peel, seed, and roughly chop the cucumber.
- Add the chopped cucumber, Greek yogurt, dill, olive oil, lemon juice, Dijon mustard, honey (if using), salt, and pepper to the food processor or blender.
- Process until the mixture is completely smooth and creamy. Check consistency and add a tablespoon of water for a thinner dressing if needed.
- Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or honey to your liking.
- For the best flavour, refrigerate the dressing for at least 30 minutes to allow the flavours to meld.
- Toss with your favourite salad greens or use as a dipping sauce for crudités.
