Ingredients:
- 1 medium head green cabbage (about 2 lbs / 900g), finely shredded
- 1/4 cup (30g) granulated sugar
- 1/4 cup (60ml) white vinegar
- 1/3 cup (80ml) mayonnaise (full-fat is recommended for best flavor)
- 2 tablespoons (30ml) vegetable oil
- 1/4 teaspoon (1.25ml) salt
- 1/8 teaspoon (0.6ml) ground black pepper
- Optional: 2 tablespoons finely chopped onion or shallot for extra flavor
Instructions:
- Finely shred the green cabbage using a knife or mandoline. Place the shredded cabbage in a large mixing bowl.
- In a separate small bowl (or jar), whisk together the sugar, white vinegar, mayonnaise, vegetable oil, salt, and pepper until the sugar is completely dissolved and the dressing is smooth. (If using onion/shallot, add it now).
- Pour the dressing over the shredded cabbage. Toss gently but thoroughly to ensure all the cabbage is evenly coated.
- Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, but preferably overnight. This allows the flavors to meld and the cabbage to soften slightly.
- Before serving, give the cole slaw a good stir to redistribute the dressing. Serve chilled and enjoy!
