Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup vegetable oil
- 1/3 cup distilled white vinegar
- 1 tbsp fresh lemon juice
- 2 tbsp water
- 1 packet (0.7 oz) Good Seasons Italian Dressing Mix
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 2 tbsp finely grated Parmesan cheese
- 1 tbsp mayonnaise
- 1 tsp granulated sugar
- 1/4 tsp coarse black pepper
Instructions:
- Pour the distilled white vinegar, lemon juice, and water into a jar. Add the Good Seasons packet, garlic powder, basil, and oregano. Note: This wakes up the dried herbs.
- Spoon in the mayonnaise, sugar, and coarse black pepper.
- Add the finely grated Parmesan cheese until the liquid looks slightly cloudy and textured.
- Mix the extra virgin olive oil and vegetable oil in a small measuring cup.
- If using a jar, pour all the oil in at once. If using a bowl, whisk the oil in a very slow, steady stream.
- Secure the lid on your jar and shake vigorously for at least 60 seconds until the color lightens and no oil streaks remain.
- Dip a piece of lettuce into the dressing to check the flavor.
- Place the container in the refrigerator for at least 30 minutes until the flavors have fully melded and the chill is set.
- Give it one more quick shake right before serving to redistribute the Parmesan.
