Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup vegetable oil
  • 1/3 cup distilled white vinegar
  • 1 tbsp fresh lemon juice
  • 2 tbsp water
  • 1 packet (0.7 oz) Good Seasons Italian Dressing Mix
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 tbsp finely grated Parmesan cheese
  • 1 tbsp mayonnaise
  • 1 tsp granulated sugar
  • 1/4 tsp coarse black pepper

Instructions:

  1. Pour the distilled white vinegar, lemon juice, and water into a jar. Add the Good Seasons packet, garlic powder, basil, and oregano. Note: This wakes up the dried herbs.
  2. Spoon in the mayonnaise, sugar, and coarse black pepper.
  3. Add the finely grated Parmesan cheese until the liquid looks slightly cloudy and textured.
  4. Mix the extra virgin olive oil and vegetable oil in a small measuring cup.
  5. If using a jar, pour all the oil in at once. If using a bowl, whisk the oil in a very slow, steady stream.
  6. Secure the lid on your jar and shake vigorously for at least 60 seconds until the color lightens and no oil streaks remain.
  7. Dip a piece of lettuce into the dressing to check the flavor.
  8. Place the container in the refrigerator for at least 30 minutes until the flavors have fully melded and the chill is set.
  9. Give it one more quick shake right before serving to redistribute the Parmesan.
