Ingredients:

  • 1 cup (120g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup (60ml) water (room temperature)
  • 2 tablespoons olive oil
  • 1 cup (240g) cottage cheese (preferably full-fat for creaminess)
  • 1 small clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup (120g) shredded mozzarella cheese
  • ½ cup (75g) sliced bell peppers (mixed colours)
  • ½ cup (75g) sliced mushrooms
  • ¼ cup (30g) black olives, sliced (optional)

Instructions:

  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Gradually add olive oil and water, mixing until a dough forms.
  3. Knead the dough on a lightly floured surface for about 2 minutes.
  4. Shape into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  5. In a bowl, blend cottage cheese until smooth.
  6. Mix in minced garlic, oregano, basil, salt, and pepper until well combined.
  7. Preheat your oven to 450°F (230°C).
  8. On a floured surface, roll out the dough into a circle, about 10-12 inches in diameter.
  9. Transfer the dough onto a baking sheet lined with parchment paper.
  10. Spread the cottage cheese mixture evenly over the dough.
  11. Sprinkle shredded mozzarella cheese on top.
  12. Add sliced bell peppers, mushrooms, and olives as desired.
  13. Place the pizza in the oven and bake for 20-25 minutes, until the crust is golden and the cheese is bubbling.
  14. Remove from the oven, let it cool for a couple of minutes, slice and enjoy!
