Ingredients:
- 1 cup (120g) all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup (60ml) water (room temperature)
- 2 tablespoons olive oil
- 1 cup (240g) cottage cheese (preferably full-fat for creaminess)
- 1 small clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup (120g) shredded mozzarella cheese
- ½ cup (75g) sliced bell peppers (mixed colours)
- ½ cup (75g) sliced mushrooms
- ¼ cup (30g) black olives, sliced (optional)
Instructions:
- In a mixing bowl, combine flour, baking powder, and salt.
- Gradually add olive oil and water, mixing until a dough forms.
- Knead the dough on a lightly floured surface for about 2 minutes.
- Shape into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
- In a bowl, blend cottage cheese until smooth.
- Mix in minced garlic, oregano, basil, salt, and pepper until well combined.
- Preheat your oven to 450°F (230°C).
- On a floured surface, roll out the dough into a circle, about 10-12 inches in diameter.
- Transfer the dough onto a baking sheet lined with parchment paper.
- Spread the cottage cheese mixture evenly over the dough.
- Sprinkle shredded mozzarella cheese on top.
- Add sliced bell peppers, mushrooms, and olives as desired.
- Place the pizza in the oven and bake for 20-25 minutes, until the crust is golden and the cheese is bubbling.
- Remove from the oven, let it cool for a couple of minutes, slice and enjoy!
