Ingredients:
- 2 cups all-purpose flour
- 3/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 tbsp honey
- 1 large egg
- 1/2 cup plain Greek yogurt
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 1/2 cups fresh cranberries
- 1/2 cup powdered sugar
- 2 tbsp fresh orange juice
- 1/2 tsp orange zest
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- Toss fresh cranberries with 1 tablespoon of the measured flour in a medium bowl until evenly coated.
- In a large bowl, whisk together the remaining flour, brown sugar, baking powder, baking soda, and salt.
- In a separate jug, combine melted butter, honey, egg, Greek yogurt, orange zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined.
- Gently fold in the floured cranberries and pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar, orange juice, and orange zest until smooth, then drizzle over the cooled loaf.
