Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 tbsp honey
  • 1 large egg
  • 1/2 cup plain Greek yogurt
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh cranberries
  • 1/2 cup powdered sugar
  • 2 tbsp fresh orange juice
  • 1/2 tsp orange zest

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. Toss fresh cranberries with 1 tablespoon of the measured flour in a medium bowl until evenly coated.
  3. In a large bowl, whisk together the remaining flour, brown sugar, baking powder, baking soda, and salt.
  4. In a separate jug, combine melted butter, honey, egg, Greek yogurt, orange zest, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined.
  6. Gently fold in the floured cranberries and pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Whisk together powdered sugar, orange juice, and orange zest until smooth, then drizzle over the cooled loaf.
