Ingredients:

  • 1 (6-ounce) package cranberry flavored Jell-O gelatin (170g)
  • 2 cups boiling water (475 ml)
  • 1 (14-ounce) can whole berry cranberry sauce (400g)
  • 1 (11-ounce) can mandarin oranges, drained (312g)
  • 1 cup chopped celery (100g)
  • 1/2 cup chopped pecans or walnuts (50g)
  • Optional: 1/4 cup orange liqueur, like Cointreau or Grand Marnier (60ml)

Instructions:

  1. In a large bowl, pour boiling water over the cranberry Jell-O gelatin powder. Whisk until the gelatin is completely dissolved, about 2 minutes.
  2. Add the whole berry cranberry sauce to the gelatin mixture. Stir well to break up the sauce and combine evenly.
  3. Let the mixture cool slightly at room temperature for about 15 minutes, this is important for even ingredient suspension.
  4. Gently fold in the drained mandarin oranges, chopped celery, and chopped pecans or walnuts. If using the orange liqueur, stir it in at this stage.
  5. Pour the mixture into a 9x13 inch baking dish. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the Jello is fully set. The salad should be firm to the touch.
