Ingredients:
- 1 (6-ounce) package cranberry flavored Jell-O gelatin (170g)
- 2 cups boiling water (475 ml)
- 1 (14-ounce) can whole berry cranberry sauce (400g)
- 1 (11-ounce) can mandarin oranges, drained (312g)
- 1 cup chopped celery (100g)
- 1/2 cup chopped pecans or walnuts (50g)
- Optional: 1/4 cup orange liqueur, like Cointreau or Grand Marnier (60ml)
Instructions:
- In a large bowl, pour boiling water over the cranberry Jell-O gelatin powder. Whisk until the gelatin is completely dissolved, about 2 minutes.
- Add the whole berry cranberry sauce to the gelatin mixture. Stir well to break up the sauce and combine evenly.
- Let the mixture cool slightly at room temperature for about 15 minutes, this is important for even ingredient suspension.
- Gently fold in the drained mandarin oranges, chopped celery, and chopped pecans or walnuts. If using the orange liqueur, stir it in at this stage.
- Pour the mixture into a 9x13 inch baking dish. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the Jello is fully set. The salad should be firm to the touch.
