Ingredients:

  • 12 oz Fettuccine or Linguine pasta
  • 1 lb Large shrimp, peeled and deveined
  • 4 Tbsp Unsalted butter, divided
  • 1 Tbsp Olive oil
  • 1 medium Onion, finely diced
  • 2 stalks Celery, finely diced
  • 1 medium Green Bell Pepper, finely diced
  • 4 cloves Garlic, minced
  • 2 Tbsp All-Purpose Flour
  • 2 Tbsp Cajun Seasoning (plus 1 tsp for shrimp)
  • 1 cup Low sodium Chicken Broth
  • 1 ½ cups Heavy Cream
  • 1 cup Freshly grated Parmesan Cheese
  • 1 tsp Worcestershire Sauce
  • 1 Tbsp Freshly squeezed Lemon Juice
  • ¼ cup Fresh Parsley, chopped
  • Salt and Black Pepper to taste

Instructions:

  1. Boil pasta according to package directions until al dente. Before draining, reserve 1 cup of the starchy pasta water.
  2. Pat the shrimp very dry. Season lightly with salt, pepper, and 1 teaspoon of the Cajun seasoning.
  3. Heat 1 Tbsp butter and the olive oil in a large skillet over medium-high heat. Sear the seasoned shrimp quickly for 1-2 minutes per side until pink. Remove shrimp from the skillet and set aside.
  4. Reduce heat to medium. Add the remaining 3 Tbsp butter to the skillet. Sauté the diced onion, celery, and bell pepper (the trinity) until softened, about 5-7 minutes.
  5. Add the minced garlic and the remaining 2 Tbsp of Cajun seasoning. Cook for 1 minute until fragrant.
  6. Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste, forming a light roux.
  7. Slowly whisk in the chicken broth until smooth. Bring to a gentle simmer. Then, slowly pour in the heavy cream, stirring constantly. Let the sauce gently simmer for 3-5 minutes until it thickens slightly.
  8. Remove the skillet completely from the direct heat source. Gradually stir in the grated Parmesan cheese until the sauce is melted and perfectly smooth. Add Worcestershire sauce. Adjust salt and pepper if needed. If the sauce is too thick, incorporate a splash of reserved pasta water.
  9. Return the cooked pasta and the seared shrimp to the skillet. Toss gently to ensure everything is evenly coated in the luxurious sauce. Stir in the fresh lemon juice.
  10. Serve immediately, garnished generously with fresh chopped parsley.
