Ingredients:
- 1 small head green cabbage, finely shredded (about 6 cups)
- 2 medium carrots, peeled and grated (about 1 cup)
- 1/2 medium yellow onion, finely chopped (about 1/2 cup)
- 1/4 cup chopped fresh parsley (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon celery seed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Shred the cabbage, grate the carrots, and finely chop the onion (and parsley if using).
- Place all prepared vegetables in the large mixing bowl.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and pepper until smooth.
- Pour the dressing over the vegetables and toss gently to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavours to meld.
