Ingredients:

  • 1 small head green cabbage, finely shredded (about 6 cups)
  • 2 medium carrots, peeled and grated (about 1 cup)
  • 1/2 medium yellow onion, finely chopped (about 1/2 cup)
  • 1/4 cup chopped fresh parsley (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Shred the cabbage, grate the carrots, and finely chop the onion (and parsley if using).
  2. Place all prepared vegetables in the large mixing bowl.
  3. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and pepper until smooth.
  4. Pour the dressing over the vegetables and toss gently to coat evenly.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavours to meld.
