Ingredients:

  • 16 ounces (450g) refried beans (vegetarian or traditional)
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (240ml) sour cream
  • 1/2 cup (120ml) mayonnaise
  • 1 packet (1 ounce/30g) taco seasoning
  • 1/2 cup (60g) shredded cheddar cheese
  • 1/4 cup (60ml) pickled jalapeños, finely chopped (plus extra for garnish, if desired)
  • 1/4 cup (60ml) finely chopped green onions (plus extra for garnish, if desired)
  • 1 tablespoon lime juice, freshly squeezed
  • Diced tomatoes (optional)
  • Black olives, sliced (optional)
  • Avocado, diced (optional)
  • Cilantro, chopped (optional)

Instructions:

  1. In a large microwave-safe bowl, combine the softened cream cheese and refried beans.
  2. Microwave for 2 minutes, stirring halfway through. Continue heating in 30-second intervals until fully melted and smooth.
  3. Add the sour cream, mayonnaise, taco seasoning, cheddar cheese, jalapeños, green onions, and lime juice to the bowl.
  4. Stir all ingredients together until well combined.
  5. Taste the dip and adjust the seasoning as needed. Add more taco seasoning for a bolder flavour, or a pinch of salt and pepper.
  6. Transfer to a serving dish. Garnish with additional cheese, jalapeños, green onions, tomatoes, black olives, avocado, or cilantro, if desired. Serve warm or cold with tortilla chips, vegetables, or crackers.
