Ingredients:
- 16 ounces (450g) refried beans (vegetarian or traditional)
- 8 ounces (225g) cream cheese, softened
- 1 cup (240ml) sour cream
- 1/2 cup (120ml) mayonnaise
- 1 packet (1 ounce/30g) taco seasoning
- 1/2 cup (60g) shredded cheddar cheese
- 1/4 cup (60ml) pickled jalapeños, finely chopped (plus extra for garnish, if desired)
- 1/4 cup (60ml) finely chopped green onions (plus extra for garnish, if desired)
- 1 tablespoon lime juice, freshly squeezed
- Diced tomatoes (optional)
- Black olives, sliced (optional)
- Avocado, diced (optional)
- Cilantro, chopped (optional)
Instructions:
- In a large microwave-safe bowl, combine the softened cream cheese and refried beans.
- Microwave for 2 minutes, stirring halfway through. Continue heating in 30-second intervals until fully melted and smooth.
- Add the sour cream, mayonnaise, taco seasoning, cheddar cheese, jalapeños, green onions, and lime juice to the bowl.
- Stir all ingredients together until well combined.
- Taste the dip and adjust the seasoning as needed. Add more taco seasoning for a bolder flavour, or a pinch of salt and pepper.
- Transfer to a serving dish. Garnish with additional cheese, jalapeños, green onions, tomatoes, black olives, avocado, or cilantro, if desired. Serve warm or cold with tortilla chips, vegetables, or crackers.
