- 1 cup (250 g) prepared hummus, smooth consistency is best
- ¼ cup (60 ml) fresh lemon juice
- ¼ cup (60 ml) Extra Virgin Olive Oil, high-quality recommended
- 3 to 6 Tbsp (45 - 90 ml) cold water, or more, to thin
- 1 small garlic clove, minced or grated
- ½ teaspoon ground cumin
- ¼ teaspoon fine sea salt, to taste
- ⅛ teaspoon freshly cracked black pepper
Instructions:
- Prep Aromatics: Finely mince or grate the small garlic clove.
- Combine Solids: In your mixing bowl or food processor, combine the 1 cup of hummus, the ¼ cup of fresh lemon juice, the minced garlic, ground cumin, salt, and pepper.
- Start the Whisk/Blend: If using a bowl, start whisking vigorously. If using a machine, begin pulsing/blending on low speed.
- Incorporate the Oil: Slowly drizzle in the ¼ cup of Extra Virgin Olive Oil while continuously whisking or blending. This slow addition helps the dressing emulsify.
- Thin to Consistency: Once the oil is incorporated, begin adding the cold water, 1 tablespoon at a time. Continue adding water until the dressing drips easily from a spoon and is pourable.
- Taste and Adjust: Give the dressing a proper taste. Adjust seasoning (salt or lemon juice if flat), thinning (more water if too thick), or acidity (more oil or a pinch of sugar if too tart).
- Rest (Optional but Recommended): Transfer the dressing to an airtight container and allow it to rest in the refrigerator for at least 30 minutes to let the flavors meld.
- Serve: Give the dressing a final shake or whisk before serving over your chosen salad or grain bowl.
