Ingredients:

  • 2 ripe mangoes, peeled and diced (about 1 ½ cups or 300g)
  • 1 cup (240ml) coconut milk (full-fat for creaminess)
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon gelatin or agar-agar (for a vegetarian option)

Instructions:

  1. If using gelatin, sprinkle it over 2 tablespoons of cold water in a small bowl and let it bloom for about 5 minutes.
  2. In a blender or food processor, combine the diced mangoes, coconut milk, sugar, vanilla extract, and lemon juice. Blend until smooth and creamy.
  3. If using gelatin, heat the saucepan over low heat, add the bloomed gelatin, and stir until fully dissolved. Quickly add the melted gelatin to the mango mixture and blend again to combine.
  4. Pour the mixture into serving glasses or bowls and refrigerate for at least 1 hour or until set.
