Ingredients:
- 2 cups distilled white vinegar
- 1 cup water
- 1/4 cup granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 6-8 cloves of garlic, peeled and smashed
- 4-6 fresh red chili peppers
- 1 pound fresh okra, trimmed
- Additional fresh herbs (like dill) for garnish (optional)
Instructions:
- Combine vinegar, water, sugar, and salt in a saucepan. Add mustard seeds, black peppercorns, garlic, and chili peppers. Bring mixture to a boil, then reduce heat and simmer for 5 minutes.
- Wash and trim the okra. Optional: Blanch in boiling water for 1-2 minutes to preserve color and texture.
- Pack okra tightly into sterilized jars. Add optional fresh herbs if using.
- Pour hot brine over okra, leaving about 1/2-inch headspace. Wipe the rims of jars with a clean cloth to remove any residue.
- Seal with lids and let cool to room temperature. Refrigerate overnight for best flavor.
