Ingredients:

  • 2 cups distilled white vinegar
  • 1 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 6-8 cloves of garlic, peeled and smashed
  • 4-6 fresh red chili peppers
  • 1 pound fresh okra, trimmed
  • Additional fresh herbs (like dill) for garnish (optional)

Instructions:

  1. Combine vinegar, water, sugar, and salt in a saucepan. Add mustard seeds, black peppercorns, garlic, and chili peppers. Bring mixture to a boil, then reduce heat and simmer for 5 minutes.
  2. Wash and trim the okra. Optional: Blanch in boiling water for 1-2 minutes to preserve color and texture.
  3. Pack okra tightly into sterilized jars. Add optional fresh herbs if using.
  4. Pour hot brine over okra, leaving about 1/2-inch headspace. Wipe the rims of jars with a clean cloth to remove any residue.
  5. Seal with lids and let cool to room temperature. Refrigerate overnight for best flavor.
