Ingredients:
- 3 medium ripe bananas (about 450g)
- ½ cup (65g) all-purpose flour
- 2 large eggs
- 1 cup (240ml) milk
- 1 cup (125g) breadcrumbs (preferably panko for extra crunch)
- ½ cup (100g) granulated sugar
- 2 tsp ground cinnamon
- Pinch of salt
- Vegetable oil for frying (about 2 cups or as needed)
Instructions:
- Peel and slice the bananas into fry-sized pieces (approximately 1/4 to 1/2 inch thick).
- In one bowl, mix flour with a pinch of salt. In the second bowl, whisk together eggs and milk until smooth. In a third bowl, combine breadcrumbs with half the cinnamon sugar (reserve the rest for sprinkling later).
- Dip each banana slice into the flour, coating lightly. Next, dip into the egg mixture, allowing excess to drip off. Finally, coat with the breadcrumb mixture, pressing gently to adhere.
- In a frying pan, heat vegetable oil over medium heat until it reaches 350°F (180°C).
- Carefully place a few coated banana slices in the hot oil without overcrowding. Fry for 2-3 minutes on each side until golden brown and crispy.
- Remove the fries using a slotted spoon and drain on paper towels. While still warm, sprinkle with the reserved cinnamon sugar.
- Enjoy immediately for the best taste and texture.
