Ingredients:

  • 4 large russet potatoes (about 1.5 kg)
  • 2 tablespoons vegetable oil (plus extra for frying)
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. Wash and peel the potatoes. Cut them into even-sized fries (about 1/4 inch thick).
  2. Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.
  3. In a small bowl, combine paprika, cayenne, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well.
  4. Drain and pat the fries dry with a clean kitchen towel.
  5. Toss the dried fries with vegetable oil and half of the Cajun seasoning until evenly coated.
  6. Heat oil in a pot or deep fryer to 350°F (175°C).
  7. Fry the potatoes in batches until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and drain on paper towels.
  8. While the fries are still hot, toss them with the remaining Cajun seasoning for an extra kick.
  9. Serve immediately with your favourite dipping sauce.
