Ingredients:
- 4 large russet potatoes (about 1.5 kg)
- 2 tablespoons vegetable oil (plus extra for frying)
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions:
- Wash and peel the potatoes. Cut them into even-sized fries (about 1/4 inch thick).
- Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.
- In a small bowl, combine paprika, cayenne, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well.
- Drain and pat the fries dry with a clean kitchen towel.
- Toss the dried fries with vegetable oil and half of the Cajun seasoning until evenly coated.
- Heat oil in a pot or deep fryer to 350°F (175°C).
- Fry the potatoes in batches until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and drain on paper towels.
- While the fries are still hot, toss them with the remaining Cajun seasoning for an extra kick.
- Serve immediately with your favourite dipping sauce.
