Ingredients:
- 450g Boneless, skinless chicken breast, finely diced
- 1/2 cup All-purpose flour (plus extra for dredging)
- 1 teaspoon Baking powder
- 3/4 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/4 cup Fresh parsley, finely chopped
- 2 Tablespoons Fresh chives, finely snipped
- 1 teaspoon Lemon zest
- 1 large Egg, lightly beaten
- 1/4 cup Milk
- Vegetable or canola oil, for shallow frying
- 1/2 cup Plain Greek yogurt
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Freshly squeezed lemon juice
- 1 teaspoon Fresh dill, chopped
- Pinch of salt and pepper (for dip)
Instructions:
- Finely dice the chicken breast into very small, uniform pieces (about 1/4 inch cubes), or pulse briefly in a food processor until coarse, not puréed. Place in the large mixing bowl.
- In a separate small bowl, whisk together the flour (1/2 cup), baking powder, salt, and pepper.
- To the bowl with the chicken, add the chopped parsley, chives, and lemon zest. Add the lightly beaten egg and milk. Mix gently until just combined.
- Gradually add the dry flour mixture to the wet chicken mixture. Stir just until the flour disappears. Do not overmix; a slightly shaggy texture is perfect.
- Cover the bowl and chill the mixture in the fridge for 20 minutes. This helps the fritter mixture hold its shape during cooking.
- Pour oil into the skillet to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).
- Lightly dust your hands with the reserved flour. Scoop tablespoons of the mixture and gently flatten them slightly into small patties (about 2 inches wide). Carefully place 4–5 fritters into the hot oil, ensuring you don't overcrowd the pan.
- Cook for 3–4 minutes per side until deeply golden brown and cooked through.
- Remove the fritters with a slotted spoon and immediately place them on a wire rack set over paper towels to drain excess oil.
- While fritters drain, whisk together all dip ingredients (yogurt, mayonnaise, lemon juice, dill, salt, and pepper) until smooth. Season to taste.
- Serve the fritters immediately while hot alongside the Zesty Herb Dip.
