- 2 lbs sweet potatoes, peeled and cut into sticks

- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 425°F (218°C) and place a rimmed baking sheet inside the oven while it heats to ensure a flash-sear.
- Cut the peeled sweet potatoes into uniform sticks, roughly 1/4 to 1/2 inch wide and 3 inches long.
- In a large bowl, toss the potato sticks with olive oil until evenly coated.
- Sprinkle the cornstarch over the fries and toss again until the oil becomes slightly cloudy and the starch is fully integrated.
- Mix in the garlic powder, smoked paprika, salt, and pepper until the fries are evenly seasoned.
- Carefully remove the hot baking sheet from the oven and spread the fries in a single layer, ensuring they do not touch.
- Bake for 20–25 minutes, flipping once halfway through, until the edges are mahogany-colored and the tips are crisp.
