Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (75g) whole almonds, toasted and chopped
- Optional: Powdered sugar for dusting
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together eggs and vanilla until combined.
- Gradually add the wet ingredients to the dry ingredients to form a dough.
- Fold in the chopped almonds until evenly distributed.
- Transfer the dough to the prepared baking sheet, shaping into a log about 12 inches long and 4 inches wide.
- Bake for 25-30 minutes, until lightly golden and firm.
- Remove from the oven and allow to cool for 15 minutes.
- Slice the log diagonally into 1-inch wide pieces.
- Arrange the slices cut-side down on the baking sheet.
- Bake again for 10-15 minutes until golden brown and crisp.
- Cool on a wire rack before serving.
- Dust with powdered sugar if desired.
