Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (75g) whole almonds, toasted and chopped
  • Optional: Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk together eggs and vanilla until combined.
  5. Gradually add the wet ingredients to the dry ingredients to form a dough.
  6. Fold in the chopped almonds until evenly distributed.
  7. Transfer the dough to the prepared baking sheet, shaping into a log about 12 inches long and 4 inches wide.
  8. Bake for 25-30 minutes, until lightly golden and firm.
  9. Remove from the oven and allow to cool for 15 minutes.
  10. Slice the log diagonally into 1-inch wide pieces.
  11. Arrange the slices cut-side down on the baking sheet.
  12. Bake again for 10-15 minutes until golden brown and crisp.
  13. Cool on a wire rack before serving.
  14. Dust with powdered sugar if desired.
