Ingredients:
- 9 cups Rice Chex Cereal (plain)
- 12 ounces White Chocolate Chips
- 4 tablespoons Unsalted Butter
- 1 teaspoon Vanilla Extract
- 2 cups Powdered Sugar (sifted)
- 1/4 cup Vanilla Protein Powder or Dry Milk Powder
- 1/2 cup Rainbow Sprinkles (Jimmies), plus extra for garnish
Instructions:
- Measure the Chex cereal into a very large mixing bowl and set aside.
- Combine the white chocolate chips and butter in a microwave-safe bowl. Melt until smooth, stirring every 30 seconds to prevent scorching.
- Remove the melted chocolate mixture from heat and stir in the vanilla extract until fully incorporated.
- Pour the warm chocolate mixture evenly over the cereal in the large bowl. Gently fold the cereal using a rubber spatula until every piece is lightly coated.
- In a separate large zip-top gallon bag, combine the powdered sugar and the optional vanilla/milk powder. Add the coated cereal to the bag, seal tightly, and shake vigorously until the cereal is completely coated in the white powder.
- Spread the coated cereal mixture in a single layer onto a parchment-lined baking sheet. Allow it to cool completely at room temperature for about 20 minutes, or chill in the refrigerator for 10 minutes.
- Once cool and dry, transfer the cereal back into the large bowl. Sprinkle generously with the rainbow sprinkles and toss gently one last time to distribute the confetti evenly.
- Store the finished Cupcake Puppy Chow in an airtight container at room temperature until ready to serve.
