Ingredients:

  • 9 cups Rice Chex Cereal (plain)
  • 12 ounces White Chocolate Chips
  • 4 tablespoons Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 2 cups Powdered Sugar (sifted)
  • 1/4 cup Vanilla Protein Powder or Dry Milk Powder
  • 1/2 cup Rainbow Sprinkles (Jimmies), plus extra for garnish

Instructions:

  1. Measure the Chex cereal into a very large mixing bowl and set aside.
  2. Combine the white chocolate chips and butter in a microwave-safe bowl. Melt until smooth, stirring every 30 seconds to prevent scorching.
  3. Remove the melted chocolate mixture from heat and stir in the vanilla extract until fully incorporated.
  4. Pour the warm chocolate mixture evenly over the cereal in the large bowl. Gently fold the cereal using a rubber spatula until every piece is lightly coated.
  5. In a separate large zip-top gallon bag, combine the powdered sugar and the optional vanilla/milk powder. Add the coated cereal to the bag, seal tightly, and shake vigorously until the cereal is completely coated in the white powder.
  6. Spread the coated cereal mixture in a single layer onto a parchment-lined baking sheet. Allow it to cool completely at room temperature for about 20 minutes, or chill in the refrigerator for 10 minutes.
  7. Once cool and dry, transfer the cereal back into the large bowl. Sprinkle generously with the rainbow sprinkles and toss gently one last time to distribute the confetti evenly.
  8. Store the finished Cupcake Puppy Chow in an airtight container at room temperature until ready to serve.
