- 4 cups whole milk
- 1/4 cup white vinegar or lemon juice
- 1 teaspoon salt
- 1 cup whey (from curd preparation)
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- Salt and pepper to taste
- 2 tablespoons chopped fresh herbs (e.g., chives or parsley)
Instructions:
- Pour whole milk into a large saucepan and heat over medium until it simmers (bubbles on the edges).
- Stir in vinegar or lemon juice and salt; let sit for 5 minutes until curds separate.
- Line a mixing bowl with cheesecloth and pour the curds and whey mixture into it. Allow the curds to drain for 10 minutes.
- In a small saucepan, melt butter over medium heat.
- Whisk in flour to form a roux, cooking for 1-2 minutes until golden.
- Gradually add whey, whisking until smooth and thickened (3-5 minutes).
- Season with salt, pepper, and fresh herbs.
- Spoon the curds onto a serving plate and drizzle with the whey sauce.
- Enjoy warm or chilled.
