Ingredients:

  • 4 cups whole milk
  • 1/4 cup white vinegar or lemon juice
  • 1 teaspoon salt
  • 1 cup whey (from curd preparation)
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh herbs (e.g., chives or parsley)

Instructions:

  1. Pour whole milk into a large saucepan and heat over medium until it simmers (bubbles on the edges).
  2. Stir in vinegar or lemon juice and salt; let sit for 5 minutes until curds separate.
  3. Line a mixing bowl with cheesecloth and pour the curds and whey mixture into it. Allow the curds to drain for 10 minutes.
  4. In a small saucepan, melt butter over medium heat.
  5. Whisk in flour to form a roux, cooking for 1-2 minutes until golden.
  6. Gradually add whey, whisking until smooth and thickened (3-5 minutes).
  7. Season with salt, pepper, and fresh herbs.
  8. Spoon the curds onto a serving plate and drizzle with the whey sauce.
  9. Enjoy warm or chilled.
