Ingredients:
- 1 and ¾ cups (220g) all-purpose flour
- 1 and ¾ cups (350g) granulated sugar
- ¾ cup (65g) unsweetened cocoa powder
- 1 and ½ teaspoons baking powder
- 1 and ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs, at room temperature
- 1 cup (240ml) whole milk, at room temperature
- ½ cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
- 1 quart (946ml) chocolate or vanilla ice cream
Instructions:
- Preheat oven: Set the temperature to 350°F (175°C).
- Prepare pans: Grease and line the cake pans with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, beat eggs with milk, oil, and vanilla until well combined.
- Combine mixtures: Gradually add wet ingredients to dry, mixing until just combined.
- Incorporate boiling water: Carefully stir in boiling water until the batter is smooth.
- Pour batter: Divide the batter evenly between the prepared pans.
- Bake: Place in the oven and bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool: Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Serve: Once cool, slice and serve with a scoop of ice cream on the side.
