Ingredients:

  • 4 cups (480g) bread flour
  • 1 tablespoon (15g) granulated sugar
  • 2 teaspoons (10g) salt
  • 2 ¼ teaspoons (7g) active dry yeast
  • 1 ½ cups (360ml) warm water
  • 1 cup (170g) semi-sweet chocolate chips
  • 2 quarts (1.9L) water
  • 2 tablespoons (30g) baking soda

Instructions:

  1. In a small bowl, mix warm water and sugar. Sprinkle yeast on top and let sit until frothy.
  2. In a large mixing bowl, combine bread flour and salt. Add yeast mixture and stir until a dough forms.
  3. On a floured surface, knead dough for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with a damp towel, and let rise in a warm place for 30 minutes.
  5. Flatten dough slightly and fold in chocolate chips until evenly distributed.
  6. Divide dough into 8 pieces, roll each into a ball, and poke a hole in the center.
  7. Place shaped bagels on a floured surface, cover, and let rise for an additional 10 minutes.
  8. In a large pot, bring water and baking soda to a boil. Boil bagels for about 1 minute on each side.
  9. Place bagels on a parchment-lined baking sheet and bake in a preheated oven at 425°F for 20 minutes or until golden brown.
  10. Allow bagels to cool on a wire rack before serving.
