Ingredients:
- ½ cup (1 stick) unsalted butter (113g)
- 6 ounces semi-sweet chocolate, chopped (170g)
- 2 large eggs
- 2 large egg yolks
- ¼ cup granulated sugar (50g)
- 1 teaspoon pure vanilla extract
- 2 tablespoons all-purpose flour (15g)
- Pinch of salt
- Powdered sugar for dusting (optional)
- Vanilla ice cream or whipped cream (optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Grease the ramekins with butter and dust with cocoa powder; place on a baking sheet.
- Melt the butter and chopped chocolate together in a double boiler or microwave until smooth.
- Let the melted chocolate mixture cool slightly.
- In a mixing bowl, whisk the whole eggs, yolks, sugar, and vanilla until pale and frothy.
- Gradually fold the melted chocolate mixture into the egg mixture.
- Sift the flour and salt into the chocolate batter; gently fold until just combined.
- Evenly pour the batter into prepared ramekins, filling them about ¾ full.
- Bake in preheated oven for 12-14 minutes until the edges are firm but the center is soft.
- Let them cool for 1 minute before inverting onto plates; dust with powdered sugar.
- Serve immediately with ice cream or whipped cream, if desired.
