Ingredients:

  • ½ cup (1 stick) unsalted butter (113g)
  • 1 cup semi-sweet chocolate chips (170g)
  • 2 large eggs
  • 2 large egg yolks
  • ⅓ cup granulated sugar (67g)
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons all-purpose flour (15g)
  • Pinch of salt
  • Powdered sugar for dusting (optional)
  • Fresh berries (strawberries, raspberries) (optional)
  • Vanilla ice cream (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C). Grease the ramekins with butter and dust with flour.
  2. Melt the butter and chocolate together using a double boiler or microwave. Stir until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, sugar, and vanilla until light and fluffy.
  4. Gradually combine the melted chocolate mixture into the egg mixture, stirring gently.
  5. Sift in the flour and salt, folding the mixture until just combined.
  6. Pour the batter evenly into the prepared ramekins and chill for about 30 minutes.
  7. Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is soft.
  8. Let the cakes cool for 1 minute before inverting onto plates. Serve immediately, dusted with powdered sugar, and topped with berries or ice cream.
