Ingredients:

  • 1 cup fresh aloe vera gel (about 2 large aloe vera leaves)
  • 1/2 cup coconut milk (120 ml)
  • 1/4 cup honey or agave syrup (60 ml)
  • 1 tbsp unflavored gelatin (7g)
  • 1/4 cup water (60 ml)
  • 1 cup coconut cream (240 ml)
  • 1/2 cup condensed milk (120 ml)
  • 1 tsp vanilla extract
  • 1 tbsp unflavored gelatin (7g)
  • 1/4 cup water (60 ml)

Instructions:

  1. Prepare the Aloe Vera Layer: Cut open the aloe vera leaves and scoop out the gel into a blender. Add coconut milk and honey/agave to the blender; blend until smooth.
  2. In a saucepan, sprinkle gelatin over water; let it bloom for 5 minutes. Heat the gelatin mixture gently until dissolved, then mix it into aloe vera mixture.
  3. Pour into dessert cups and chill for 30 minutes until set.
  4. Prepare the Coconut Layer: In a saucepan, combine coconut cream, condensed milk, and vanilla extract.
  5. In a separate bowl, bloom gelatin in water as in the previous step. Heat the gelatin until dissolved; mix into coconut mixture until well combined.
  6. Pour over the set aloe layer and return to refrigerator for 2-4 hours or until fully set.
  7. Serve: Once fully set, garnish with fresh fruits or toasted coconut, and serve chilled.
