Ingredients:
- 1 cup fresh aloe vera gel (about 2 large aloe vera leaves)
- 1/2 cup coconut milk (120 ml)
- 1/4 cup honey or agave syrup (60 ml)
- 1 tbsp unflavored gelatin (7g)
- 1/4 cup water (60 ml)
- 1 cup coconut cream (240 ml)
- 1/2 cup condensed milk (120 ml)
- 1 tsp vanilla extract
- 1 tbsp unflavored gelatin (7g)
- 1/4 cup water (60 ml)
Instructions:
- Prepare the Aloe Vera Layer: Cut open the aloe vera leaves and scoop out the gel into a blender. Add coconut milk and honey/agave to the blender; blend until smooth.
- In a saucepan, sprinkle gelatin over water; let it bloom for 5 minutes. Heat the gelatin mixture gently until dissolved, then mix it into aloe vera mixture.
- Pour into dessert cups and chill for 30 minutes until set.
- Prepare the Coconut Layer: In a saucepan, combine coconut cream, condensed milk, and vanilla extract.
- In a separate bowl, bloom gelatin in water as in the previous step. Heat the gelatin until dissolved; mix into coconut mixture until well combined.
- Pour over the set aloe layer and return to refrigerator for 2-4 hours or until fully set.
- Serve: Once fully set, garnish with fresh fruits or toasted coconut, and serve chilled.
