Ingredients:

  • 4 (4-6 oz/115-170g) beef cube steaks (about 1/2 inch/1.25cm thick)
  • 1 cup (120g) all-purpose flour, plus more for dredging
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1/2 cup (60g) crushed Ritz crackers (or plain breadcrumbs)
  • 1/2 cup (60g) grated Parmesan cheese (optional)
  • 1/2 cup (120ml) vegetable oil, for frying
  • 1/4 cup (60ml) reserved cooking oil from frying the steak
  • 1/4 cup (30g) all-purpose flour
  • 3 cups (720ml) milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder

Instructions:

  1. Tenderize the cube steaks with a meat mallet to about 1/4-inch thickness. Season generously with salt and pepper.
  2. In one shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne pepper (if using), thyme, salt, and pepper. In another dish, whisk together eggs and milk. In a third dish, combine crushed Ritz crackers and grated Parmesan (if using).
  3. Dredge each steak in flour mixture, then dip in egg mixture, then coat thoroughly in the Ritz cracker mixture. Press the breading firmly onto the steak.
  4. Heat vegetable oil in a large skillet over medium-high heat. Carefully place breaded steaks in the hot oil, being careful not to overcrowd the pan.
  5. Fry for 3-4 minutes per side, or until golden brown and cooked through. If using an instant-read thermometer, the internal temperature should reach 145°F (63°C). Remove steaks and place on a wire rack to drain.
  6. Remove all but 1/4 cup of the cooking oil from the skillet. Over medium heat, whisk in flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  7. Gradually whisk in milk, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook, whisking constantly, until the gravy thickens to your desired consistency (about 5-7 minutes).
  8. Stir in salt, pepper, and garlic powder. Taste and adjust seasonings as needed.
  9. Spoon gravy over the country fried steaks and serve immediately.
