Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (160g) yellow cornmeal, medium grind
- 1/4 cup (50g) granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 large egg
- 1 cup (240ml) buttermilk
- 1/4 cup (60ml) vegetable oil (or melted unsalted butter)
- 2 tbsp honey (optional)
Instructions:
- Preheat oven to 400°F (200°C). Grease an 8x8 inch baking pan.
- In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the egg, buttermilk, and oil (or melted butter).
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- Incorporate the honey until combined.
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean and the top is golden brown.
- Let cool slightly in the pan before cutting into squares and serving the cornbread.
