Ingredients:
- 4 cups (950ml) Water
- 1 teaspoon (6g) Salt, plus more to taste
- 1 cup (170g) Stone-Ground Grits (not instant)
- 4 tablespoons (57g) Unsalted Butter
- 1 cup (240ml) Heavy Cream or Whole Milk
- 1/2 cup (60g) Grated Sharp Cheddar Cheese (optional)
Instructions:
- Bring water and salt to a rolling boil in a medium-sized saucepan.
- Gradually whisk in the grits, ensuring no lumps form.
- Reduce heat to low, cover, and simmer for 20-25 minutes, stirring frequently to prevent sticking.
- Remove from heat and stir in butter, cream (or milk), and cheese (if using) until melted and smooth. Season with pepper and more salt to taste.
- Serve immediately while hot and creamy.
