Ingredients:

  • 4 cups (950ml) Water
  • 1 teaspoon (6g) Salt, plus more to taste
  • 1 cup (170g) Stone-Ground Grits (not instant)
  • 4 tablespoons (57g) Unsalted Butter
  • 1 cup (240ml) Heavy Cream or Whole Milk
  • 1/2 cup (60g) Grated Sharp Cheddar Cheese (optional)

Instructions:

  1. Bring water and salt to a rolling boil in a medium-sized saucepan.
  2. Gradually whisk in the grits, ensuring no lumps form.
  3. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring frequently to prevent sticking.
  4. Remove from heat and stir in butter, cream (or milk), and cheese (if using) until melted and smooth. Season with pepper and more salt to taste.
  5. Serve immediately while hot and creamy.
