Ingredients:
- 1 cup (240ml) whole milk
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) cornstarch
- 1/4 teaspoon (1g) salt
- 2 large egg yolks
- 2 tablespoons (28g) unsalted butter, softened
- 1 teaspoon (5ml) vanilla extract
- 1 cup (240ml) heavy cream, cold
- 2 tablespoons (25g) powdered sugar
- 1/2 teaspoon (2.5ml) vanilla extract
- 4 medium ripe bananas, sliced
- 2 tablespoons (30ml) lemon juice
- 1 (12-ounce) package vanilla wafers
Instructions:
- Whisk together milk, sugar, cornstarch, and salt in a saucepan. Whisk in egg yolks.
- Cook over medium heat, whisking constantly, until thickened (about 5-7 minutes). Remove from heat.
- Stir in butter and vanilla extract. Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and chill for at least 2 hours.
- In a cold bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Toss sliced bananas with lemon juice.
- Layer vanilla wafers, sliced bananas, and pudding in a serving dish or individual glasses. Repeat layers.
- Top with whipped cream. Chill for at least 30 minutes before serving.
