Ingredients:

  • 1 cup (240ml) whole milk
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) cornstarch
  • 1/4 teaspoon (1g) salt
  • 2 large egg yolks
  • 2 tablespoons (28g) unsalted butter, softened
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (240ml) heavy cream, cold
  • 2 tablespoons (25g) powdered sugar
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 4 medium ripe bananas, sliced
  • 2 tablespoons (30ml) lemon juice
  • 1 (12-ounce) package vanilla wafers

Instructions:

  1. Whisk together milk, sugar, cornstarch, and salt in a saucepan. Whisk in egg yolks.
  2. Cook over medium heat, whisking constantly, until thickened (about 5-7 minutes). Remove from heat.
  3. Stir in butter and vanilla extract. Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and chill for at least 2 hours.
  4. In a cold bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  5. Toss sliced bananas with lemon juice.
  6. Layer vanilla wafers, sliced bananas, and pudding in a serving dish or individual glasses. Repeat layers.
  7. Top with whipped cream. Chill for at least 30 minutes before serving.
