Ingredients:
- 2 cups (packed) shredded cooked chicken breast
- 1/2 cup finely diced celery
- 1/4 cup finely minced red onion
- 1/2 cup good quality mayonnaise
- 1/4 cup Buffalo wing sauce (Frank's Recommended)
- 2 tablespoons Blue Cheese Dressing or Ranch dressing
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh chives (optional)
Instructions:
- Ensure chicken is fully cooked, cooled, and shredded finely.
- Finely dice the celery and red onion. If the onion is too pungent, soak in cold water for 5 minutes, then drain thoroughly and pat dry.
- In a large mixing bowl, combine the mayonnaise, Buffalo sauce, blue cheese/ranch dressing, apple cider vinegar, Worcestershire sauce, garlic powder, and onion powder. Whisk until completely smooth.
- Taste the sauce mixture and add salt and pepper to taste.
- Add the shredded chicken, diced celery, and minced red onion to the dressing mixture.
- Using a rubber spatula, gently fold the ingredients together until everything is evenly coated. Avoid overmixing.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld.
- Stir in fresh chives just before serving.
