Ingredients:

  • 2 cups (packed) shredded cooked chicken breast
  • 1/2 cup finely diced celery
  • 1/4 cup finely minced red onion
  • 1/2 cup good quality mayonnaise
  • 1/4 cup Buffalo wing sauce (Frank's Recommended)
  • 2 tablespoons Blue Cheese Dressing or Ranch dressing
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh chives (optional)

Instructions:

  1. Ensure chicken is fully cooked, cooled, and shredded finely.
  2. Finely dice the celery and red onion. If the onion is too pungent, soak in cold water for 5 minutes, then drain thoroughly and pat dry.
  3. In a large mixing bowl, combine the mayonnaise, Buffalo sauce, blue cheese/ranch dressing, apple cider vinegar, Worcestershire sauce, garlic powder, and onion powder. Whisk until completely smooth.
  4. Taste the sauce mixture and add salt and pepper to taste.
  5. Add the shredded chicken, diced celery, and minced red onion to the dressing mixture.
  6. Using a rubber spatula, gently fold the ingredients together until everything is evenly coated. Avoid overmixing.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld.
  8. Stir in fresh chives just before serving.
