Ingredients:
- 2 cups cold whole milk
- 3.9 oz instant chocolate pudding mix
- 0.5 tsp instant espresso powder
- 1 cup heavy whipping cream, chilled
- 2 tbsp powdered sugar
- 1 tsp pure vanilla extract
- 1 cup crushed Oreo cookies
- 2 tbsp unsalted butter, melted
- 1 pinch sea salt
Instructions:
- Place cookies in a Ziploc bag and crush into coarse crumbs. In a small bowl, combine crumbs with melted butter and sea salt until they resemble wet sand.
- In a medium mixing bowl, whisk together cold milk, instant pudding mix, and espresso powder for 2 minutes. Let sit for 5 minutes to fully set.
- In a separate chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until soft peaks form.
- Assemble the parfaits by layering 2 tablespoons of cookie crumbs at the bottom of each glass, followed by a layer of chocolate cream and a layer of whipped cream. Repeat layers until the glass is full.
- Top with a final sprinkle of cookie crumbs and serve immediately or refrigerate.
