Ingredients:
- 8 oz (1 block) full fat Cream Cheese, softened
- 1 cup Powdered Sugar (Icing Sugar), sifted
- 1 tsp Vanilla Extract
- 1 1/2 cups Heavy Whipping Cream (Double Cream), very cold
- 20 oz canned Crushed Pineapple, drained extremely well
- 1/2 cup Maraschino Cherries, halved or roughly chopped and patted dry
- 1/2 cup shelled Pistachios, roughly chopped, unsalted
- 1/2 cup Sweetened Shredded Coconut
- 2 cups Mini Marshmallows
- 1 Tbsp Extra Pistachios (for garnish)
- 3-4 Extra Maraschino Cherries (for garnish)
Instructions:
- Drain the Pineapple: Pour the canned crushed pineapple into a fine-mesh sieve. Press down firmly with the back of a spoon to remove as much liquid as possible. Set aside. (This step prevents a runny fluff.)
- Cream the Cheese: In a large bowl, beat the softened cream cheese, sifted powdered sugar, and vanilla extract until completely smooth, light, and fluffy (about 2 minutes). Scrape down the sides.
- Whip the Cream: In a separate, chilled bowl, whip the cold heavy cream until stiff peaks form. Be careful not to over-whip into butter.
- Combine the Base: Gently fold half of the whipped cream into the cream cheese mixture using a rubber spatula until just combined. Then, gently fold in the remaining cream until streaks of white disappear. Do not deflate the mixture.
- Fold in the Ingredients: Carefully fold in the drained crushed pineapple, chopped maraschino cherries, chopped pistachios, shredded coconut, and mini marshmallows. Use broad, under-and-over motions with the spatula, ensuring everything is evenly distributed without crushing the ingredients or knocking the air out of the cream.
- Chill and Set: Transfer the mixture into your chosen serving bowl. Cover tightly with cling film, pressing the film gently onto the surface of the fluff to prevent a skin from forming.
- Chill: Refrigerate for a minimum of 2 hours, or preferably 4 hours, to allow the marshmallows to slightly soften and the mixture to firm up completely.
- Garnish: Just before serving, uncover the fluff. Sprinkle the top with reserved chopped pistachios and strategically place a few whole or halved maraschino cherries for visual appeal.
- Serve: Serve chilled directly from the bowl.
