Ingredients:

  • 2 cups (300g) fresh peaches, diced
  • 1 tbsp (15ml) honey
  • 1/4 tsp (1g) ground cinnamon
  • 1 tsp (5ml) lemon juice
  • 2 cups (480ml) Plain Greek Yogurt
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 pinch salt
  • 1 cup (100g) honey-oat granola
  • 2 tbsp (15g) sliced almonds

Instructions:

  1. Place diced peaches, honey, cinnamon, and lemon juice in a saucepan over medium heat.
  2. Cook for 3–5 minutes, stirring occasionally, until the peaches have softened slightly and the liquid has turned into a fragrant, glossy syrup.
  3. Remove from heat and let cool completely; refrigerate for 20 minutes for optimal temperature.
  4. In a medium bowl, combine the Greek yogurt, maple syrup, vanilla extract, and a pinch of salt.
  5. Whisk vigorously until the mixture is smooth and glossy.
  6. Spoon 2–3 tablespoons of the chilled peach compote into the bottom of each of the four glasses.
  7. Add a thick layer of the vanilla yogurt mixture over the peaches, smoothing the top.
  8. Sprinkle a generous layer of granola and sliced almonds on top of the yogurt.
