Ingredients:
- 2 cups (300g) fresh peaches, diced
- 1 tbsp (15ml) honey
- 1/4 tsp (1g) ground cinnamon
- 1 tsp (5ml) lemon juice
- 2 cups (480ml) Plain Greek Yogurt
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 pinch salt
- 1 cup (100g) honey-oat granola
- 2 tbsp (15g) sliced almonds
Instructions:
- Place diced peaches, honey, cinnamon, and lemon juice in a saucepan over medium heat.
- Cook for 3–5 minutes, stirring occasionally, until the peaches have softened slightly and the liquid has turned into a fragrant, glossy syrup.
- Remove from heat and let cool completely; refrigerate for 20 minutes for optimal temperature.
- In a medium bowl, combine the Greek yogurt, maple syrup, vanilla extract, and a pinch of salt.
- Whisk vigorously until the mixture is smooth and glossy.
- Spoon 2–3 tablespoons of the chilled peach compote into the bottom of each of the four glasses.
- Add a thick layer of the vanilla yogurt mixture over the peaches, smoothing the top.
- Sprinkle a generous layer of granola and sliced almonds on top of the yogurt.
