Ingredients:

  • 1 cup (125 g) All-Purpose Flour (for topping)
  • 1 cup (90 g) Rolled Oats (Old-Fashioned)
  • ½ cup (110 g) Light Brown Sugar, packed
  • ¼ cup (50 g) Granulated Sugar (for topping)
  • 1 tsp (5 g) Ground Cinnamon (for topping)
  • ¼ tsp (1 g) Pinch of Salt (Fine Sea Salt)
  • ½ cup (113 g) Unsalted Butter, chilled and cubed
  • 6 cups (900 g) Firm Apples (peeled, cored, and sliced)
  • 1 cup (120 g) Fresh or Frozen Cranberries
  • ½ cup (100 g) Granulated Sugar (for filling)
  • 2 Tbsp (15 g) All-Purpose Flour (or Cornflour/Cornstarch) (for thickening)
  • 1 Tbsp (15 ml) Lemon Juice (Freshly squeezed)
  • 1 tsp (5 ml) Vanilla Extract
  • 1 tsp (5 g) Ground Cinnamon (for filling)
  • ¼ tsp (1 g) Ground Nutmeg

Instructions:

  1. Preheat Oven: Set the oven temperature to 375°F (190°C). Lightly grease a 9-inch square or oval baking dish.
  2. Prepare the Topping: In a medium bowl, whisk together the flour, oats, brown sugar, white sugar, 1 tsp cinnamon, and salt. Add the chilled, cubed butter to the dry mixture. Using a pastry blender or fingertips, quickly work the butter into the flour until the mixture resembles coarse, pea-sized crumbs. Set the topping aside in the refrigerator.
  3. Prepare the Filling: Peel, core, and slice the apples. Place them immediately into a large mixing bowl and add the cranberries.
  4. Combine Seasonings: In a small separate bowl, mix the remaining ½ cup sugar, 2 Tbsp flour (or cornflour), lemon juice, vanilla extract, 1 tsp cinnamon, and nutmeg.
  5. Coat Fruit: Pour the seasoning mixture over the apples and cranberries. Gently toss until the fruit is thoroughly coated and the thickener is evenly distributed.
  6. Assemble: Pour the fruit mixture into the prepared baking dish, spreading it into an even layer. Retrieve the crumble topping from the fridge and sprinkle it evenly over the fruit layer. Do not press the topping down.
  7. Bake and Rest: Place the dish in the preheated oven. Bake for 40 to 45 minutes, or until the topping is deep golden brown and the filling is bubbling thickly around the edges. Remove from the oven and allow to rest for at least 10 minutes before serving, allowing the filling to set properly.
