Ingredients:
- 9 cups Rice Chex cereal
- 1 cup Small mini-pretzel twists
- 1 cup Semi-sweet chocolate chips
- ½ cup Smooth peanut butter
- ¼ cup Unsalted butter
- 1 teaspoon Pure vanilla extract
- ½ teaspoon Peppermint extract (optional)
- 4 cups Powdered sugar, sifted
- ½ cup Festive sprinkles and sanding sugar
Instructions:
- Prepare the Cereal: Place the 9 cups of Chex cereal and the pretzels into the very large mixing bowl. Set aside.
- Melt the Base: Combine the chocolate chips, peanut butter, and unsalted butter in the microwave-safe bowl. Microwave on 50% power in 30-second increments, stirring well after each interval, until the mixture is smooth and fully melted.
- Add Flavoring: Remove the melted mixture from the heat. Stir in the vanilla extract and the peppermint extract (if using). The mixture should be warm, glossy, and completely smooth.
- Coat the Cereal: Pour the warm chocolate mixture evenly over the cereal and pretzels in the large bowl.
- Gently Combine: Using a rubber spatula, very gently fold the cereal until every piece is coated. Work quickly and lightly to avoid crushing the flakes.
- Prepare the Shaking Station: Pour 2 cups of the powdered sugar into each of the two gallon-sized zip-top bags (4 cups total).
- Shake the Chow: Divide the coated cereal evenly between the two bags. Seal the bags completely, ensuring all air is expelled. Shake vigorously but gently until all the chocolate coating is obscured by the white powdered sugar, guaranteeing total coverage.
- Spread and Set: Pour the chow from the bags onto parchment-lined baking sheets, spreading it into a thin layer to allow the coating to dry and set quickly.
- Add Sprinkles: While the chow is still slightly tacky, sprinkle the festive sprinkles and sanding sugar over the top.
- Cool Completely: Allow the Reindeer Chow to cool completely at room temperature for at least 30 minutes, or speed up the process by placing it in the fridge for 15 minutes.
- Store: Break up any large clusters and store in an airtight container at room temperature.
