Ingredients:

  • 1 ½ cups all-purpose flour

  • 4 cups powdered sugar (for frosting)

  • 1 teaspoon vanilla extract (for frosting)
  • Green food coloring (to taste for frosting)
  • ½ cup mini marshmallows (or more for desired topping)
  • Red sprinkles (for decoration)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  6. Add green food coloring a few drops at a time, mixing until you achieve your desired Grinchy green color.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Once baked, carefully remove from the oven and allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  10. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, beating until light and fluffy (about 5-7 minutes).
  11. Add green food coloring until you reach your desired shade of green for the frosting.
  12. Use a piping bag fitted with a star tip to frost the cooled cupcakes with the green frosting.
  13. Top each cupcake with mini marshmallows and sprinkle with red decorations to resemble the Grinchs heart.
